Winter Salad with Kale & Cabbage

4 C kale, torn in pieces
1 C cabbage, sliced thin
1/2 red onion, sliced thin
Jerusalem artichoke, about 1-1/2 inch, sliced thin
Organic extra virgin olive oil
Bragg’s Aminos, to taste
Freshly cracked black pepper, to taste

In a large bowl, combine kale, cabbage, onion and Jerusalem artichoke (also called "sunchoke"). Drizzle with olive oil and toss to coat. Add Bragg’s Aminos (I get the spray bottle and start with a few sprays, tossing to mix, and add to taste as necessary) and pepper. Mix well.
